Recipes for the New Year: Grilled Pork Chops and Hoppin' John Can you believe that 2015 is only a day away? At this point, most people are asking themselves where the year went. Seriously, you JUST got in the habit of writing 2014 on your checks!

In order for your family to get the most out of the next 365 days, on New Year’s Day, eating the right foods is essential. And as every Southerner knows, there are three primary New Year’s foods: black-eyed peas for luck, pork for happiness and greens for riches.  And here are the best recipes for each of them.

Moore’s Amazing Grilled Pork Chops
    4 center loin pork chops
    ½ cup Moore's Original Marinade
    2 tsp dried parsley
    1 tsp dried minced onion
    1 clove finely minced garlic
    1 tsp adobo seasoning
  1. Pierce pork chops with a fork and then place them in a resealable storage bag
  2. Combine remaining ingredients in separate bowl
  3. Pour marinade combination into bag & re-seal
  4. Make sure pork is fully covered with Moore’s Marinade. Marinate pork in refrigerator for 30 minutes
  5. Grill them your favorite way until the inside temperature is at least 160°
  6. Bring marinade to a full boil, then allow to cool
  7. Serve on the side as a dipping sauce
Moore’s Hoppin’ John
    4 cups soaked black-eyed Peas
    4 tablespoons butter
    1 whole large yellow onion, Diced
    2 cloves garlic, Minced
    1 whole Green Bell Pepper, diced
    2 stalks celery, diced
    5 cups chicken broth
    1 whole ham hock
    Salt and pepper, to taste
    Cayenne Pepper to taste
    1 teaspoon dried thyme
    ½ teaspoon dried oregano
    2 Tablespoons Moore’s Original Marinade
    2 Tablespoons White Vinegar
    White rice for serving
  1. Soak black-eyed peas in cool water overnight or at least 6 hours. Rinse before using.
  2. Heat butter in a large pot over medium-high heat. Add onion, garlic, green pepper, and celery and stir. Cook for about 5 minutes. Stir in soaked beans, then add chicken broth, Moore’s Original Marinade, ham hock, thyme, oregano, salt & pepper, and cayenne to taste. Bring to a boil, then reduce heat and cover the pot for 30 minutes.
  3. After 30 minutes, check the liquid level; if it's too soupy, cook with the lid off for another 15 minutes or so. If it's too thick, splash in a little more broth.
  4. Stir in vinegar and then taste for seasonings. Add more spice if needed.
  5. Plate rice and then add mixture to the top (be sure to get plenty of the juice.)
Moore’s Lucky Collard Greens
1/4 cup diced onion
2 medium carrots sliced
1 ham hock
2 cloves garlic, minced
4 cups chicken broth
¼ cup apple cider vinegar
1 lb. collard greens
2 tablespoons Moore’s Original Marinade
1 tablespoon hot sauce (recommended: Tabasco)
Salt and freshly ground black pepper
  1. In a sauté pan over medium-high heat, cook onions, carrots, garlic, ham hock, and vinegar until the onion is browned, about 25 minutes
  2. Add the greens, Moore’s Original, hot sauce, 4 cups broth, and salt and pepper. Cover the pot and simmer until the greens are tender, about 30-45 minutes.
  3. Adjust seasoning if needed.
