Beat the Heat with Easy Summer Dishes and a Beer Cocktail What’s the best way to beat the heat during those scalding hot summer days? Good food and good drinks!  Even though there may be a heat wave coming through, all you need is plenty of hydration and some good summer dishes and cocktails to cool you off.

And maybe a nice, cool pool!

Moore’s Buffalo Shrimp Salad
    1 large fresh mango, chopped
    1 medium avocado, chopped
    1 1/2 lb shrimp, deveined, peeled, thawed, tails removed
    1 tablespoon dried garlic powder
    1 bag romaine lettuce
Salad dressing
    1/2 cup Caesar dressing
    1/4 cup Moore's Buffalo Wing Sauce
    1/4 cup honey
  1. Mix Caesar dressing, honey and Moore's Buffalo wing sauce in a bowl
  2. Coat shrimp in half of dressing mix
  3. Place shrimp in single layer on pan and sprinkle with garlic powder
  4. Broil shrimp 4-5 minutes until pink and opaque
  5. Allow shrimp to cool in refrigerator for 1-2 hours
  6. Place romaine lettuce in a bowl and top with mango, avocado, shrimp and remaining dressing
Buffalo Chicken Pasta Salad
    1 package grilled, fajita chicken breast strips
    1 - 16 ounce bottle of ranch dressing
    1 - 16 ounces bottle of Moore's Buffalo Wing Sauce
    1 - 12 ounce package of your favorite pasta, cooked
    1 medium red onion diced
    2 good sized Roma tomatoes, chopped
    4 stalks of celery, chopped
    1 avocado, optional
  1. Thaw your chicken strips. They are precooked, but you don't want them frozen.
  2. Cook pasta according to package directions. We used veggie rotini simply to get in some extra veggies. I am now hooked on the stuff. Drain pasta and rinse with cold water.
  3. In a mixing bowl, whisk the entire bottle of ranch dressing with the desired amount of wing sauce. We used half a bottle by the time we were done. I advise to add slowly and taste often.
  4. At this point mix the pasta, sauce/dressing mixture, and chicken in a large mixing bowl.
  5. Then add the onion, tomatoes, and celery and blend thoroughly.
  6. Topped with sliced avocado.
  7. You can serve it warm or cold. Personally I think it was amazing the next day as lunch cold.
  8. Things that might make nice additions are bacon, blue cheese crumbles, maybe some diced garlic... be creative!
Mini Lettuce Wraps
    1 1/2 cups Moore's Original Marinade
    2 cups carrots, shredded
    2 cups celery, diced
    1/4 cup onions, diced
    5-10 lettuce leaves, halved
  1. Shred or dice vegetables, then combine in pan on medium-low heat with Moore's Original Marinade
  2. Sauté in pan for 10-15 minutes or until vegetables are soft and light golden brown
  3. Wrap vegetable mixture in lettuce leaf halves, then secure with a toothpick
  4. Add chicken if desired
Moore’s Micheleda-Classic Beer Cocktail
1 tsp salt
1 tsp Siracha
2 tbsp lime juice
1 tsp Moore’s Original Marinade
12 oz chilled beer such as a light lager
  1. Combine all ingredients in cocktail shaker, except beer
  2. Add ice and shake until well combined
  3. Poor beer over the top to fill
